      (formula CH3CH(OH COOH) an organic acid produced during the souring of milk by a bacterial fermentation process that is used commercially in the manufacture of cheese, yoghurt and other dairy products. It is also produced in animal muscle when there is insufficient oxygen available to break down carbohydrate.
