    1. A light fluffy sweet or savoury dish that is made by gently combining egg yolks and other ingredients with stiffly beaten egg-whites, carefully putting the mixture into a cylindrical dish, leaving room at the top for it to expand, baking it in the oven and serving it immediately before the spectacular crown that has formed collapses.
Etymology: Early 19c: French, from souffler, from Latin soufflare, from sub- + flare to blow.
